- 2 lbs potatoes (or sweet potatoes)
- 2 medium bell peppers (red, orange, yellow, or green)
- 2 large shallots
- 6 to 8 slices smoked bacon
- 8 to 10 links breakfast sausage
- 1/4 cup avocado or olive oil
- 1/4 cup pure maple syrup
- 1 1/2 tsp sea salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 2 tbsp fresh chopped parsley
- Few dashes of hot sauce
- 1 cup cherry tomatoes
- 4 to 5 large eggs
- 2 tbsp fresh chives
- 2 tbsp dill
- 1 large avocado (quartered and sliced)
- Ketchup and hot sauce (for serving)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and chop your potatoes into bite-sized pieces.
- Dice the bell peppers and shallots, and cut the bacon and sausage links.
- Combine all ingredients in a large mixing bowl and toss well.
- Spread the mixture onto the sheet pan in a single layer.
- Bake for 30-35 minutes, tossing halfway through.
- Create wells in the mixture and crack the eggs into them.
- Bake for an additional 8-10 minutes until eggs are done to your liking.
- Serve with fresh herbs, avocado, ketchup, and hot sauce.
Notes
