Description

Transform your breakfast routine with these Easy Sheet Pan Breakfast Potatoes, combining crispy potatoes, savory meats, and fresh vegetables all roasted to perfection.


Ingredients

Scale
  • 2 lbs potatoes (or sweet potatoes)
  • 2 medium bell peppers (red, orange, yellow, or green)
  • 2 large shallots
  • 6 to 8 slices smoked bacon
  • 8 to 10 links breakfast sausage
  • 1/4 cup avocado or olive oil
  • 1/4 cup pure maple syrup
  • 1 1/2 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 2 tbsp fresh chopped parsley
  • Few dashes of hot sauce
  • 1 cup cherry tomatoes
  • 4 to 5 large eggs
  • 2 tbsp fresh chives
  • 2 tbsp dill
  • 1 large avocado (quartered and sliced)
  • Ketchup and hot sauce (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and chop your potatoes into bite-sized pieces.
  3. Dice the bell peppers and shallots, and cut the bacon and sausage links.
  4. Combine all ingredients in a large mixing bowl and toss well.
  5. Spread the mixture onto the sheet pan in a single layer.
  6. Bake for 30-35 minutes, tossing halfway through.
  7. Create wells in the mixture and crack the eggs into them.
  8. Bake for an additional 8-10 minutes until eggs are done to your liking.
  9. Serve with fresh herbs, avocado, ketchup, and hot sauce.

Feel free to customize with your favorite roasted vegetables or proteins. Can be prepped a day in advance.
