Ingredients

  • 1 whole chicken (about 45 lbs)
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 1 teaspoon dried thyme
  • 1 lemon, halved
  • Fresh herbs (rosemary, thyme, or parsley) for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix olive oil, salt, pepper, garlic powder, and dried thyme.
  3. Rub the mixture all over the chicken, including under the skin.
  4. Stuff the cavity of the chicken with lemon halves and fresh herbs.
  5. Wrap the chicken tightly in aluminum foil to create an envelope.
  6. Place the wrapped chicken on a baking sheet and roast in the preheated oven for 1.5 hours.
  7. Remove the chicken from the oven and let it rest for 10 minutes before unwrapping.
  8. Serve with your choice of sides and enjoy!
