- 1 whole chicken (about 4–5 lbs)
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 2 teaspoons garlic powder
- 1 teaspoon dried thyme
- 1 lemon, halved
- Fresh herbs (rosemary, thyme, or parsley) for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix olive oil, salt, pepper, garlic powder, and dried thyme.
- Rub the mixture all over the chicken, including under the skin.
- Stuff the cavity of the chicken with lemon halves and fresh herbs.
- Wrap the chicken tightly in aluminum foil to create an envelope.
- Place the wrapped chicken on a baking sheet and roast in the preheated oven for 1.5 hours.
- Remove the chicken from the oven and let it rest for 10 minutes before unwrapping.
- Serve with your choice of sides and enjoy!

- For added flavor, marinate the chicken overnight.
- Ensure the foil is tightly sealed to keep moisture in.
- Use a meat thermometer to check for doneness (165°F or 74°C).
