Ingredients
This recipe uses a simple, flavorful filling stuffed into whole pepperoncini peppers. Here’s what you’ll need:
- 12–16 whole pepperoncini peppers, drained
- 4 oz (115 g) feta cheese, crumbled
- 4 oz (115 g) cream cheese, softened
- 2 tablespoons finely chopped fresh parsley
- 1 tablespoon chopped fresh dill
- 1 tablespoon chopped fresh chives
- 1 garlic clove, finely minced
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon extra-virgin olive oil
- ¼ teaspoon dried oregano
- ⅛ teaspoon black pepper
Instructions
This recipe comes together quickly, with just a bit of prep and a short chilling period before serving.
Drain the pepperoncini well and gently pat them dry with paper towels. Removing excess moisture helps ensure the filling adheres properly and doesn’t become watery.
Carefully make a small lengthwise opening in each pepper, being careful to keep the pepper itself intact. This opening will allow you to pipe or spoon in the filling while keeping the pepper’s shape whole.
In a bowl, combine the feta, cream cheese, parsley, dill, chives, garlic, lemon juice, lemon zest, olive oil, dried oregano, and black pepper.
Mix everything together until the filling is creamy and evenly combined, with the herbs and garlic well distributed throughout.
Transfer the filling to a piping bag, or use a small spoon, to carefully fill each pepperoncini through the opening you created.
Arrange the stuffed peppers on a serving platter, positioning them cut-side up for the best presentation.
Refrigerate for at least 30 minutes before serving. This resting period allows the filling to firm up slightly and gives the flavors time to meld together.
Garnish with additional fresh herbs and a bit of extra lemon zest before serving for a beautiful, vibrant finishing touch.
