- 2 Filet Mignon steaks (1.5 to 2 inches thick)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
Instructions
- Bring the filet mignon to room temperature by removing it from the refrigerator for about 30 minutes.
- Generously season both sides with salt and pepper.
- Heat a cast-iron skillet over medium-high heat and add olive oil until it shimmers.
- Sear the seasoned filet mignons for 4-5 minutes on each side for medium-rare doneness.
- Add the butter, garlic, rosemary, and thyme in the last minute of cooking.
- Baste the steaks with the melted herb butter.
- Rest the steaks on a cutting board for about 5 minutes before serving.
Notes
Prepping garlic herb butter in advance makes it easy to slice and serve. Avoid overcrowding the skillet and always allow steaks to rest.
