- 1 Onion, finely chopped
- 2 Garlic Cloves, minced
- 1 can (15 oz) Chopped Tomatoes or 2 cups Fresh Tomatoes
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1/2 teaspoon Salt
- 1/2 teaspoon Pepper
- 1 lb White Fish Fillets (cod, tilapia, or halibut)
- 1 tablespoon Lemon Juice
- Fresh Parsley, chopped for garnish
Instructions
- Heat the Olive Oil in a large skillet over medium heat until shimmering.
- Sauté the chopped onion and minced garlic for about 5 minutes until translucent and fragrant.
- Incorporate the chopped tomatoes, cumin, paprika, salt, and pepper. Mix well and let it simmer for 10 minutes.
- Add the fish fillets, spooning some sauce over them, cover, and simmer for an additional 10-12 minutes until the fish flakes easily.
- Finish with a drizzle of lemon juice and garnish with fresh parsley before serving.
Notes
Prepare the sauce a day in advance for deeper flavors. Pair with crusty bread or a fresh salad.
