Description

A delightful appetizer featuring a creamy pea spread on crusty toasted bread, perfect for spring and summer gatherings.


Ingredients

Scale
  • 2 cups Fresh Peas (or thawed frozen peas)
  • 4 oz Cream Cheese (or Greek yogurt for a lighter option)
  • 2 tbsp Lemon Juice
  • 1/4 cup Fresh Mint (or basil)
  • Salt and Pepper to taste
  • 1 Baguette or Ciabatta
  • Olive Oil for brushing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the bread by slicing it into 1/2-inch thick pieces and arranging them on a baking sheet.
  3. Toast the bread with a brush of olive oil and sprinkle of salt for about 8-10 minutes until golden.
  4. Blend fresh or thawed peas, cream cheese, lemon juice, mint, salt, and pepper in a food processor until smooth.
  5. Taste the mixture and adjust seasoning to your liking.
  6. Assemble the crostini by spreading a generous tablespoon of the pea mixture on each bread slice.
  7. Garnish with mint leaves or a drizzle of olive oil.

Notes

Store the pea mixture in an airtight container in the refrigerator for up to three days. Toasted bread should be stored separately for crunch.
