- 2 cups Fresh Peas (or thawed frozen peas)
- 4 oz Cream Cheese (or Greek yogurt for a lighter option)
- 2 tbsp Lemon Juice
- 1/4 cup Fresh Mint (or basil)
- Salt and Pepper to taste
- 1 Baguette or Ciabatta
- Olive Oil for brushing
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the bread by slicing it into 1/2-inch thick pieces and arranging them on a baking sheet.
- Toast the bread with a brush of olive oil and sprinkle of salt for about 8-10 minutes until golden.
- Blend fresh or thawed peas, cream cheese, lemon juice, mint, salt, and pepper in a food processor until smooth.
- Taste the mixture and adjust seasoning to your liking.
- Assemble the crostini by spreading a generous tablespoon of the pea mixture on each bread slice.
- Garnish with mint leaves or a drizzle of olive oil.
Notes
Store the pea mixture in an airtight container in the refrigerator for up to three days. Toasted bread should be stored separately for crunch.
