- ½ teaspoon dried Italian seasoning
- ½ teaspoon paprika
- 3 tablespoons cream cheese (softened)
- 3 tablespoons mayonnaise
- ¼ cup finely shredded mozzarella cheese
- 1 tablespoon fresh parsley (finely chopped)
- 1 teaspoon lemon juice
Instructions
- Heat the olive oil in a skillet over medium heat.
- Toss in the finely chopped onion, grated carrot, zucchini, and red bell pepper.
- Cook for about 6-8 minutes, stirring often, until the vegetables soften.
- Add the minced garlic, salt, black pepper, dried Italian seasoning, and paprika.
- Sauté for an additional minute until fragrant.
- Remove the skillet from heat and allow the vegetable mixture to cool slightly.
- Transfer the sautéed vegetables into a large mixing bowl.
- Add the softened cream cheese, mayonnaise, mozzarella cheese, fresh parsley, and lemon juice.
- Mix thoroughly until well integrated.
- Cover the bowl and refrigerate for at least 30 minutes.
Notes
