Description

A vibrant and creamy garden vegetable spread made with fresh vegetables and cheese, perfect for toasts and snacks.


Ingredients

  • 1 tablespoon olive oil
  • ½ cup finely chopped onion
  • ½ cup grated carrot
  • ½ cup finely diced zucchini
  • ¼ cup finely diced red bell pepper
  • 2 cloves garlic (minced)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried Italian seasoning
  • ½ teaspoon paprika
  • 3 tablespoons cream cheese (softened)
  • 3 tablespoons mayonnaise
  • ¼ cup finely shredded mozzarella cheese
  • 1 tablespoon fresh parsley (finely chopped)
  • 1 teaspoon lemon juice

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Toss in the finely chopped onion, grated carrot, zucchini, and red bell pepper.
  3. Cook for about 6-8 minutes, stirring often, until the vegetables soften.
  4. Add the minced garlic, salt, black pepper, dried Italian seasoning, and paprika.
  5. Sauté for an additional minute until fragrant.
  6. Remove the skillet from heat and allow the vegetable mixture to cool slightly.
  7. Transfer the sautéed vegetables into a large mixing bowl.
  8. Add the softened cream cheese, mayonnaise, mozzarella cheese, fresh parsley, and lemon juice.
  9. Mix thoroughly until well integrated.
  10. Cover the bowl and refrigerate for at least 30 minutes.

Notes

For extra flavor, serve with crispy toasts or fresh crudités. Best when made a day in advance.
