Description

A sumptuous ribeye steak infused with garlic and fresh herbs, seared to perfection and topped with creamy garlic herb butter.


Ingredients

  • 2 Thick-Cut Ribeye Steaks
  • 1 tbsp Olive Oil
  • 2 sprigs Fresh Rosemary
  • 2 sprigs Fresh Thyme
  • Salt & Coarse Black Pepper to taste
  • 4 tbsp Unsalted Butter, softened
  • 3 cloves Garlic, finely minced
  • 1 tbsp Fresh Parsley, finely chopped
  • 1 tsp Fresh Rosemary, finely chopped
  • 1/2 tsp Coarse Sea Salt

Instructions

  1. Prepare the Compound Butter: In a bowl, mix the softened butter with minced garlic, parsley, rosemary, and a sprinkle of sea salt until combined. Scoop the mixture onto a sheet of plastic wrap, roll tightly into a log, twist the ends closed, and refrigerate for at least 30 minutes until firm.
  2. Bring the Steaks to Temperature: About 20 minutes before cooking, remove the ribeye steaks from the refrigerator. Pat them dry with paper towels, ensuring the surface is moisture-free. Season generously on all sides with salt and coarse black pepper.
  3. Sear to Perfection: Heat the olive oil in a heavy cast-iron skillet over high heat until it shimmers and begins to smoke. Lay the steaks in the pan without crowding and sear undisturbed for about 3–4 minutes on each side.
  4. Infuse with Herbs: During the final minute of cooking, toss in the fresh rosemary and thyme sprigs directly into the skillet.
  5. Melt the Garlic Butter: Transfer the steaks to a cutting board and let them rest for 5 minutes. Slice a generous round of your chilled garlic herb butter and place it directly on the hot steaks.
  6. Slice & Serve: Carve the ribeye into thick, tender slices and serve.

Notes

Can prepare garlic herb butter up to three days in advance. Use a meat thermometer for accurate doneness.
