Description

A delicious bake that combines roasted butternut squash with goat cheese, garlic, and herbs for a creamy and savory dish.


Ingredients

  • 1 large butternut squash, peeled and diced into uniform cubes
  • 1 cup goat cheese (chèvre), crumbled
  • 1/2 cup mozzarella cheese, shredded
  • 2 tbsp olive oil
  • 3 cloves garlic, finely minced
  • 2 sprigs fresh rosemary, leaves stripped and chopped
  • 1 tsp fresh thyme (optional)
  • Salt and black pepper, to taste

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Toss the diced butternut squash with olive oil, minced garlic, half of the chopped rosemary, salt, and pepper in a large bowl.
  3. Spread the seasoned squash evenly in a large baking dish and roast for 20–25 minutes, tossing halfway through.
  4. Remove the squash from the oven and sprinkle crumbled goat cheese and shredded mozzarella over the top.
  5. Lower the oven temperature to 190°C (375°F) and bake for an additional 10–12 minutes until the cheeses melt and turn golden.
  6. Finish with the remaining rosemary and thyme before serving hot.

Notes

You can prepare the squash ahead of time. This bake also pairs well with roasted vegetables or grilled chicken.
