A delicious bake that combines roasted butternut squash with goat cheese, garlic, and herbs for a creamy and savory dish.

- 1 large butternut squash, peeled and diced into uniform cubes
- 1 cup goat cheese (chèvre), crumbled
- 1/2 cup mozzarella cheese, shredded
- 2 tbsp olive oil
- 3 cloves garlic, finely minced
- 2 sprigs fresh rosemary, leaves stripped and chopped
- 1 tsp fresh thyme (optional)
- Salt and black pepper, to taste
Instructions
- Preheat the oven to 200°C (400°F).
- Toss the diced butternut squash with olive oil, minced garlic, half of the chopped rosemary, salt, and pepper in a large bowl.
- Spread the seasoned squash evenly in a large baking dish and roast for 20–25 minutes, tossing halfway through.
- Remove the squash from the oven and sprinkle crumbled goat cheese and shredded mozzarella over the top.
- Lower the oven temperature to 190°C (375°F) and bake for an additional 10–12 minutes until the cheeses melt and turn golden.
- Finish with the remaining rosemary and thyme before serving hot.
Notes
You can prepare the squash ahead of time. This bake also pairs well with roasted vegetables or grilled chicken.
