- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 1 head of garlic (cloves separated and peeled)
- 2–3 sprigs of fresh rosemary
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and cracked black pepper to taste
Instructions
- Prepare the chicken: Pat the chicken quarters dry and season with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat the skillet: Heat olive oil and melt butter in a skillet over medium-high heat.
- Sear the chicken: Place chicken skin-side down in the skillet and sear for 6-8 minutes.
- Add garlic and rosemary: Flip the chicken and scatter garlic cloves and rosemary around it.
- Lower the heat and cover: Reduce heat, cover loosely, and cook for 25-30 minutes, basting occasionally.
- Check for doneness: Ensure the chicken reaches an internal temperature of 165°F (74°C).
- Serve and enjoy: Serve the chicken hot with caramelized garlic and pan drippings.
