Description

Ingredients

  • 3 large bone-in, skin-on chicken leg quarters
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 head of garlic (cloves separated and peeled)
  • 23 sprigs of fresh rosemary
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and cracked black pepper to taste

Instructions

  1. Prepare the chicken: Pat the chicken quarters dry and season with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat the skillet: Heat olive oil and melt butter in a skillet over medium-high heat.
  3. Sear the chicken: Place chicken skin-side down in the skillet and sear for 6-8 minutes.
  4. Add garlic and rosemary: Flip the chicken and scatter garlic cloves and rosemary around it.
  5. Lower the heat and cover: Reduce heat, cover loosely, and cook for 25-30 minutes, basting occasionally.
  6. Check for doneness: Ensure the chicken reaches an internal temperature of 165°F (74°C).
  7. Serve and enjoy: Serve the chicken hot with caramelized garlic and pan drippings.
