- 2 cups burrata cheese
- 2 cups cherry tomatoes
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- salt and pepper to taste
- fresh basil leaves for garnish
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta but don’t rinse; the starch helps the sauce cling better. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Toss in the cherry tomatoes, cooking until they soften and some begin to burst, roughly 5-7 minutes.
- Lower the heat and add the burrata cheese. Stir gently, allowing it to melt into the sauce.
- Season the sauce with salt and pepper to taste.
- Toss the drained pasta into the skillet, ensuring it gets fully coated in the sauce.
- Plate immediately and garnish with fresh basil leaves.
Notes
For a lighter version, substitute burrata with ricotta. You can also add grilled chicken or shrimp for extra protein.
