Description

A rich and creamy pasta dish featuring burrata cheese and cherry tomatoes, perfect for cozy dinners or dinner parties.


Ingredients

  • pasta of choice (spaghetti or fettuccine)
  • 2 cups burrata cheese
  • 2 cups cherry tomatoes
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • fresh basil leaves for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta but don’t rinse; the starch helps the sauce cling better. Set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Toss in the cherry tomatoes, cooking until they soften and some begin to burst, roughly 5-7 minutes.
  4. Lower the heat and add the burrata cheese. Stir gently, allowing it to melt into the sauce.
  5. Season the sauce with salt and pepper to taste.
  6. Toss the drained pasta into the skillet, ensuring it gets fully coated in the sauce.
  7. Plate immediately and garnish with fresh basil leaves.

Notes

For a lighter version, substitute burrata with ricotta. You can also add grilled chicken or shrimp for extra protein.
