- 4 large roasted red peppers (Florina preferred)
- 1 cup feta cheese, crumbled
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh oregano, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Combine feta cheese, garlic, olive oil, parsley, oregano, salt, and pepper in a mixing bowl.
- Stuff each roasted pepper with the creamy mixture.
- Arrange the stuffed peppers in a baking dish, making sure they stand upright.
- Bake for 20-25 minutes until heated through and golden on top.
- Serve warm as an appetizer or side dish.
Notes
For added flavor, drizzle olive oil on top before baking. You can prepare the filling a day in advance and store in the fridge.
