Ingredients

Scale

This recipe uses a hearty combination of two meats, smoky green chiles, warm spices, pasta, and a rich, creamy cheese finish. Here’s what you’ll need:

  • 1 pound ground beef
  • 1 pound beef sausage
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups roasted green chiles, chopped
  • 4 cups beef broth
  • 1 can diced tomatoes
  • 2 cups uncooked pasta
  • 4 oz (115 g) cream cheese, softened
  • 1½ cups shredded cheddar cheese
  • ½ cup heavy cream
  • 2 tablespoons fresh cilantro, chopped

Instructions

This recipe comes together in a single pot, making it both easy to prepare and easy to clean up afterward.

Step 1: Brown the Meat

Heat a large pot over medium-high heat. Add the ground beef and beef sausage, breaking them apart as they cook. Cook until browned and no longer pink.

Step 2: Drain Excess Grease

If there’s excess grease in the pot once the meat is fully cooked, drain it off before continuing.

Step 3: Cook the Onion

Add the diced onion to the pot and cook for 3 to 4 minutes, until softened.

Step 4: Add the Seasonings

Stir in the minced garlic, dried oregano, onion powder, cumin, smoked paprika, salt, and black pepper. Cook for about 1 minute, just until fragrant, being careful not to let the garlic burn.

Step 5: Add the Chiles, Tomatoes, and Broth

Add the chopped green chiles, diced tomatoes, and beef broth to the pot. Stir well and bring the mixture to a gentle boil.

Step 6: Add the Pasta

Add the uncooked pasta to the pot and reduce the heat to a simmer.

Step 7: Cook the Pasta

Cook according to the pasta package directions, stirring occasionally, until the pasta is tender.

Step 8: Melt in the Cream Cheese

Reduce the heat to low and stir in the softened cream cheese until it’s completely melted and incorporated into the broth.

Step 9: Add the Cheddar and Cream

Add the shredded cheddar cheese and heavy cream to the pot. Stir until the cheese melts and the soup becomes creamy and smooth.

Step 10: Simmer Gently

Simmer gently for 2 to 3 minutes to let everything come together. Avoid boiling the soup after adding the dairy, as high heat can cause the cheese and cream to separate or become grainy.

Step 11: Taste and Adjust

Taste the soup and adjust the seasoning as needed.

Step 12: Garnish and Serve

Garnish with fresh chopped cilantro and extra shredded cheese before serving hot.
