Description

Ingredients

  • 2 slices of bread (sourdough, ciabatta, or whole grain)
  • 2 tablespoons of butter
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/2 cup fresh spinach, chopped
  • 1/2 cup ricotta cheese
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium heat.
  2. Spread butter on one side of each slice of bread.
  3. On the unbuttered side of one slice, spread half the ricotta cheese.
  4. Layer the chopped sun-dried tomatoes and fresh spinach above the ricotta.
  5. Season with salt and pepper.
  6. Top with the second slice of bread, buttered side up.
  7. Place the sandwich in the skillet and cook until golden brown, about 3-4 minutes on each side.
  8. Remove from skillet, slice diagonally, and serve warm.
