Ingredients

  • 1 can (14 oz) diced tomatoes
  • 4 cups Hatch green chiles, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup diced potatoes (optional)
  • Fresh cilantro for garnish

Instructions

  1. Brown the beef: In a large pot over medium heat, cook the ground beef until it’s no longer pink. Drain any excess fat afterwards.
  2. Sauté aromatics: Add the chopped onion and minced garlic. Cook for 3-5 minutes until the onions turn translucent.
  3. Incorporate the chiles and tomatoes: Stir in the diced Hatch green chiles and canned tomatoes. Add diced potatoes if using.
  4. Add the broth: Pour in the beef broth gradually and bring to a gentle simmer.
  5. Simmer to perfection: Cook for 20-30 minutes, stirring occasionally.
  6. Season: Taste and season with salt and pepper.
  7. Serve and garnish: Serve piping hot, garnished with fresh cilantro.
