- 4 cups Hatch green chiles, diced

- 4 cups beef broth

- Fresh cilantro for garnish
Instructions
- Brown the beef: In a large pot over medium heat, cook the ground beef until it’s no longer pink. Drain any excess fat afterwards.
- Sauté aromatics: Add the chopped onion and minced garlic. Cook for 3-5 minutes until the onions turn translucent.
- Incorporate the chiles and tomatoes: Stir in the diced Hatch green chiles and canned tomatoes. Add diced potatoes if using.
- Add the broth: Pour in the beef broth gradually and bring to a gentle simmer.
- Simmer to perfection: Cook for 20-30 minutes, stirring occasionally.
- Season: Taste and season with salt and pepper.
- Serve and garnish: Serve piping hot, garnished with fresh cilantro.
