Description

Delightful bell peppers filled with a creamy herbed ricotta mixture, perfect for any occasion.


Ingredients

  • 4 bell peppers (red, yellow, or green)
  • 1 cup ricotta cheese
  • 1/2 cup grated parmesan cheese
  • 1 cup fresh herbs (basil, parsley, thyme)
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • Olive oil, for drizzling
  • Optional: red pepper flakes for heat

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Combine ricotta cheese, grated parmesan, fresh herbs, minced garlic, salt, and pepper in a mixing bowl. Mix well.
  4. Stuff each pepper with the ricotta mixture.
  5. Place the stuffed peppers upright in a baking dish and drizzle olive oil over the tops.
  6. Bake in the preheated oven for 25-30 minutes, until the peppers are tender and the tops are golden.
  7. Serve warm as a delightful side dish.

Notes

Prepare the ricotta filling a day in advance for convenience. These peppers are easily customizable with added ingredients like quinoa or meat.
