Ingredients

- 4 bell peppers (red, yellow, or green)
- 1 cup ricotta cheese
- 1/2 cup grated parmesan cheese
- 1 cup fresh herbs (basil, parsley, thyme)
- 1 clove garlic, minced
- Salt and pepper, to taste
- Olive oil, for drizzling
- Optional: red pepper flakes for heat
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- Combine ricotta cheese, grated parmesan, fresh herbs, minced garlic, salt, and pepper in a mixing bowl. Mix well.
- Stuff each pepper with the ricotta mixture.
- Place the stuffed peppers upright in a baking dish and drizzle olive oil over the tops.
- Bake in the preheated oven for 25-30 minutes, until the peppers are tender and the tops are golden.
- Serve warm as a delightful side dish.
Notes
Prepare the ricotta filling a day in advance for convenience. These peppers are easily customizable with added ingredients like quinoa or meat.
