Description

A delightful and comforting dish featuring tender chicken breasts baked with sweet honey, tart cranberries, and creamy feta cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup fresh or dried cranberries
  • 1/4 cup honey
  • 1/2 cup feta cheese, crumbled
  • Salt and pepper to taste
  • 1 teaspoon dried thyme or rosemary

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lay down the chicken breasts in a baking dish, then drizzle with olive oil.
  3. Sprinkle salt, pepper, and thyme (or rosemary) over the chicken, massaging the seasonings in.
  4. Combine cranberries and honey in a medium bowl, then pour over the chicken.
  5. Crumble the feta cheese on top of the chicken.
  6. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Serve warm with a sprinkle of fresh herbs or a slice of lemon.

Notes

Make-ahead: Assemble in advance and refrigerate. This dish can also be cooked in an air fryer at 375°F (190°C) for about 20 minutes.
