- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 cup fresh or dried cranberries
- 1/4 cup honey
- 1/2 cup feta cheese, crumbled
- Salt and pepper to taste
- 1 teaspoon dried thyme or rosemary
Instructions
- Preheat your oven to 375°F (190°C).
- Lay down the chicken breasts in a baking dish, then drizzle with olive oil.
- Sprinkle salt, pepper, and thyme (or rosemary) over the chicken, massaging the seasonings in.
- Combine cranberries and honey in a medium bowl, then pour over the chicken.
- Crumble the feta cheese on top of the chicken.
- Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Serve warm with a sprinkle of fresh herbs or a slice of lemon.
Notes
Make-ahead: Assemble in advance and refrigerate. This dish can also be cooked in an air fryer at 375°F (190°C) for about 20 minutes.
