Ingredients

  • 1 avocado, diced
  • 1 cup jasmine rice
  • 2 tablespoons honey
  • 1 lime, juiced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook the jasmine rice: Prepare the rice according to package instructions.
  2. Mix the marinade: In a small bowl, whisk together honey, lime juice, salt, and pepper.
  3. Marinate the chicken: Place the chicken breasts in the marinade, ensuring they’re well coated. Let them sit for at least 30 minutes.
  4. Cook the chicken: Heat a grill pan or grill to medium-high heat and cook the chicken for about 6-7 minutes on each side, until cooked through.
  5. Rest and slice the chicken: Once cooked, remove from heat and let it rest before slicing into strips.
  6. Layer the stack: On a plate, scoop jasmine rice, add diced avocado, and top with sliced chicken.

Notes

Marinate chicken overnight for more flavor. Can also be made with chicken thighs for a richer taste.
