- 700 g potatoes (Yukon Gold or russet)
- 1 tsp olive oil
- 1 tsp sweet paprika
- 1 tsp garlic powder
- 0.5 tsp sea salt
- 0.25 tsp black pepper
- 500 g ground beef
- 1 tbsp tomato paste
- Onion powder, ground cumin, dried oregano (to taste)
- 250 g guacamole
- 200 g salsa
- 2 tbsp fresh cilantro
- 2 tbsp lime juice
- 0.25 cup chopped red onion
- 2 cups diced tomatoes
- 2 cups Mexican cheese blend
Instructions
- Preheat the oven to 425°F (220°C).
- Prep the potatoes by rinsing and slicing them into cubes. Toss with olive oil, sweet paprika, garlic powder, sea salt, and black pepper.
- Roast the seasoned potatoes on a baking sheet for 25–30 minutes until golden brown and crispy.
- Cook the ground beef in a large sauté pan over medium heat, stirring in tomato paste and spices once browned.
- Assemble the bowl with a base of crispy roasted potatoes, topped with ground beef, guacamole, salsa, diced tomatoes, cilantro, red onion, and shredded cheese.
- Finish with a drizzle of fresh lime juice. Serve warm and enjoy!

Feel free to customize with jalapeños for spice or use plant-based meat substitutes.
