Description

A delightful dish featuring rich salmon fillets paired with crispy roasted potatoes and vibrant broccoli, all drizzled with a luxurious lemon butter sauce.


Ingredients

  • 4 salmon fillets (170 g each)
  • 60 g unsalted butter
  • 30 ml fresh lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Lemon slices, for garnish
  • Fresh parsley, chopped
  • 680 g baby potatoes, halved
  • 45 ml olive oil
  • 5 g garlic powder
  • 5 g paprika
  • 450 g broccoli florets
  • 30 ml olive oil for broccoli
  • Salt and pepper, to taste for broccoli
  • 5 g lemon zest (optional)

Instructions

  1. Preheat the oven to 220°C (425°F).
  2. Prepare a large baking sheet lined with parchment paper.
  3. Toss halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper in a large bowl.
  4. Arrange the seasoned potatoes in a single layer on the baking sheet.
  5. Roast potatoes for 20 minutes.
  6. Prepare broccoli by tossing florets with olive oil, salt, and pepper in a separate bowl.
  7. Combine broccoli with roasted potatoes and return the baking sheet to the oven for an additional 15-20 minutes.
  8. Create lemon butter sauce by melting unsalted butter in a skillet and adding minced garlic.
  9. Cook the salmon fillets in the skillet until golden on both sides.
  10. Serve with crispy potatoes and broccoli, drizzling the lemon butter sauce over the salmon.

Notes

For a spicy kick, add chili flakes to the garlic butter. Ensure not to overcrowd the baking sheet for crispy results.
