- 60 g unsalted butter
- 30 ml fresh lemon juice
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Lemon slices, for garnish
- Fresh parsley, chopped
- 680 g baby potatoes, halved
- 45 ml olive oil
- 5 g garlic powder
- 5 g paprika
- 450 g broccoli florets
- 30 ml olive oil for broccoli
- Salt and pepper, to taste for broccoli
- 5 g lemon zest (optional)
Instructions
- Preheat the oven to 220°C (425°F).
- Prepare a large baking sheet lined with parchment paper.
- Toss halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper in a large bowl.
- Arrange the seasoned potatoes in a single layer on the baking sheet.
- Roast potatoes for 20 minutes.
- Prepare broccoli by tossing florets with olive oil, salt, and pepper in a separate bowl.
- Combine broccoli with roasted potatoes and return the baking sheet to the oven for an additional 15-20 minutes.
- Create lemon butter sauce by melting unsalted butter in a skillet and adding minced garlic.
- Cook the salmon fillets in the skillet until golden on both sides.
- Serve with crispy potatoes and broccoli, drizzling the lemon butter sauce over the salmon.
Notes
For a spicy kick, add chili flakes to the garlic butter. Ensure not to overcrowd the baking sheet for crispy results.
