Ingredients

  • 2 boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 1/2 cup feta cheese
  • 2 tablespoons honey
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Cook the orzo pasta: Bring a small saucepan of water to a boil, add a pinch of salt and the orzo, cooking until al dente. Drain and set aside.
  2. Prepare the mustard-lemon dressing: In a bowl, whisk together the olive oil, Dijon mustard, lemon juice, minced garlic, and salt and pepper until well-combined.
  3. Sauté the chicken: Heat a non-stick skillet over medium heat, add a drizzle of olive oil if needed, then toss in the diced chicken. Cook for about 5-7 minutes until golden brown and cooked through.
  4. Coat the chicken: Pour the mustard-lemon dressing over the chicken and stir to coat evenly.
  5. Whip the feta: In a separate bowl, beat the feta cheese with honey until smooth and creamy.
  6. Assemble the bowls: Place a scoop of orzo in each bowl, top with the Dijon chicken, and drizzle with the honey whipped feta.
  7. Garnish and serve: Add fresh herbs if desired, and serve immediately.
