- 2 boneless, skinless chicken breasts, diced

- 1 tablespoon Dijon mustard

- 1 cup orzo pasta
- 1/2 cup feta cheese
- 2 tablespoons honey
- Salt and pepper to taste

Instructions
- Cook the orzo pasta: Bring a small saucepan of water to a boil, add a pinch of salt and the orzo, cooking until al dente. Drain and set aside.
- Prepare the mustard-lemon dressing: In a bowl, whisk together the olive oil, Dijon mustard, lemon juice, minced garlic, and salt and pepper until well-combined.
- Sauté the chicken: Heat a non-stick skillet over medium heat, add a drizzle of olive oil if needed, then toss in the diced chicken. Cook for about 5-7 minutes until golden brown and cooked through.
- Coat the chicken: Pour the mustard-lemon dressing over the chicken and stir to coat evenly.
- Whip the feta: In a separate bowl, beat the feta cheese with honey until smooth and creamy.
- Assemble the bowls: Place a scoop of orzo in each bowl, top with the Dijon chicken, and drizzle with the honey whipped feta.
- Garnish and serve: Add fresh herbs if desired, and serve immediately.
