Description

A comforting and flavorful dish featuring layers of roasted eggplant, marinara sauce, and melted cheese.


Ingredients

  • 2 large eggplants, sliced into thick rounds
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Brush the eggplant slices with olive oil and season with salt and black pepper.
  3. Arrange the eggplant slices in a single layer on a baking sheet and roast for about 20 minutes.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
  5. Add a layer of roasted eggplant slices.
  6. Sprinkle mozzarella cheese over the eggplant, followed by a dusting of Parmesan cheese.
  7. Repeat the layers until you run out of ingredients, finishing with marinara and cheese.
  8. Sprinkle with dried oregano and garlic powder.
  9. Bake in the oven for 30-35 minutes until bubbly and golden brown.
  10. Remove from the oven and let cool slightly before serving.
  11. Garnish with fresh basil leaves.
