- 2 large eggplants, sliced into thick rounds
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 2 cups marinara sauce
- 2 cups mozzarella cheese, shredded
- 1 cup Parmesan cheese, grated
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Fresh basil leaves for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Brush the eggplant slices with olive oil and season with salt and black pepper.
- Arrange the eggplant slices in a single layer on a baking sheet and roast for about 20 minutes.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Add a layer of roasted eggplant slices.
- Sprinkle mozzarella cheese over the eggplant, followed by a dusting of Parmesan cheese.
- Repeat the layers until you run out of ingredients, finishing with marinara and cheese.
- Sprinkle with dried oregano and garlic powder.
- Bake in the oven for 30-35 minutes until bubbly and golden brown.
- Remove from the oven and let cool slightly before serving.
- Garnish with fresh basil leaves.
