Description

A hearty taco bowl featuring crispy roasted potatoes, savory ground beef, fresh toppings, and creamy avocado.


Ingredients

  • 2 pounds russet potatoes (diced)
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 pound ground beef (or ground turkey)
  • 1 tablespoon olive oil
  • 2 tablespoons taco seasoning
  • ½ cup tomato sauce
  • ¼ cup water
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 avocado (sliced)
  • ½ cup sour cream
  • ¼ cup chopped cilantro
  • ¼ cup sliced green onions
  • Jalapeño slices, corn kernels, black beans, hot sauce, lime wedges (optional but delicious!)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced potatoes with olive oil, paprika, garlic powder, salt, and black pepper.
  3. Spread the seasoned potatoes on a baking sheet and roast for about 25-30 minutes, flipping halfway through.
  4. Heat olive oil in a skillet over medium-high heat and add the ground beef or turkey, cooking until browned, about 5-7 minutes.
  5. Sprinkle in the taco seasoning, tomato sauce, and water. Stir and let simmer for about 5 minutes.
  6. Divide the crispy potatoes among serving bowls.
  7. Top each portion with the seasoned taco meat.
  8. Layer on the shredded lettuce, diced tomatoes, and avocado slices.
  9. Finish with sour cream, cilantro, green onions, and any additional toppings. Serve with lime wedges.
