- 2 pounds russet potatoes (diced)
- 2 tablespoons olive oil
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 pound ground beef (or ground turkey)
- 1 tablespoon olive oil
- 2 tablespoons taco seasoning
- ½ cup tomato sauce
- ¼ cup water
- 1 cup shredded cheddar or Mexican blend cheese
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 avocado (sliced)
- ½ cup sour cream
- ¼ cup chopped cilantro
- ¼ cup sliced green onions
- Jalapeño slices, corn kernels, black beans, hot sauce, lime wedges (optional but delicious!)
Instructions
- Preheat the oven to 425°F (220°C).
- Toss the diced potatoes with olive oil, paprika, garlic powder, salt, and black pepper.
- Spread the seasoned potatoes on a baking sheet and roast for about 25-30 minutes, flipping halfway through.
- Heat olive oil in a skillet over medium-high heat and add the ground beef or turkey, cooking until browned, about 5-7 minutes.
- Sprinkle in the taco seasoning, tomato sauce, and water. Stir and let simmer for about 5 minutes.
- Divide the crispy potatoes among serving bowls.
- Top each portion with the seasoned taco meat.
- Layer on the shredded lettuce, diced tomatoes, and avocado slices.
- Finish with sour cream, cilantro, green onions, and any additional toppings. Serve with lime wedges.
