- 1 lb lean ground beef
- 1 tbsp olive oil
- 1 tbsp butter
- 1 small onion, diced
- 4 garlic cloves, minced
- 1 tsp Worcestershire sauce
- 1 tsp soy sauce or tamari
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and black pepper, to taste
- 1/2 cup cottage cheese or plain Greek yogurt
- 1/4 cup beef broth
- 1/4 cup shredded Parmesan cheese
- 1 tbsp butter
- 2 cups cooked rice or cauliflower rice
- Optional: steamed broccoli, roasted zucchini, or green beans
- Optional: 1 tsp chopped parsley for garnishing
Instructions
- Heat the olive oil and a tablespoon of butter in a large skillet over medium heat. Once hot, gently add in the diced onion, stirring occasionally. Cook until softened and translucent—about 3-4 minutes.
- Add the ground beef to the skillet. Break it up with your wooden spoon, cooking until browned and fully cooked through—about 5-6 minutes.
- Stir in minced garlic, Worcestershire sauce, soy sauce, garlic powder, onion powder, salt, and pepper.
- Lower the heat and mix in cottage cheese or Greek yogurt, beef broth, shredded Parmesan, and remaining butter. Stir until creamy and smooth.
- Spoon generous servings of the beef mixture over your cooked rice or cauliflower rice.
- Finish with a sprinkle of chopped parsley for garnish. Serve warm and enjoy!
Notes
Store leftovers in an airtight container; they’ll keep for up to 3 days in the fridge. Reheat gently over low heat.
