Description

A comforting and creamy bowl featuring lean ground beef, garlic, and cottage cheese, perfect for a quick dinner.


Ingredients

  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 small onion, diced
  • 4 garlic cloves, minced
  • 1 tsp Worcestershire sauce
  • 1 tsp soy sauce or tamari
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper, to taste
  • 1/2 cup cottage cheese or plain Greek yogurt
  • 1/4 cup beef broth
  • 1/4 cup shredded Parmesan cheese
  • 1 tbsp butter
  • 2 cups cooked rice or cauliflower rice
  • Optional: steamed broccoli, roasted zucchini, or green beans
  • Optional: 1 tsp chopped parsley for garnishing

Instructions

  1. Heat the olive oil and a tablespoon of butter in a large skillet over medium heat. Once hot, gently add in the diced onion, stirring occasionally. Cook until softened and translucent—about 3-4 minutes.
  2. Add the ground beef to the skillet. Break it up with your wooden spoon, cooking until browned and fully cooked through—about 5-6 minutes.
  3. Stir in minced garlic, Worcestershire sauce, soy sauce, garlic powder, onion powder, salt, and pepper.
  4. Lower the heat and mix in cottage cheese or Greek yogurt, beef broth, shredded Parmesan, and remaining butter. Stir until creamy and smooth.
  5. Spoon generous servings of the beef mixture over your cooked rice or cauliflower rice.
  6. Finish with a sprinkle of chopped parsley for garnish. Serve warm and enjoy!

Notes

Store leftovers in an airtight container; they’ll keep for up to 3 days in the fridge. Reheat gently over low heat.
