- 2 cups low-fat cottage cheese
- 2 large eggs
- 1/4 cup sugar-free sweetener (allulose or monk fruit) or honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup rolled oats
- 1/2 cup almond milk or milk of choice
- 1 1/2 cups fresh or frozen blueberries
- 1/4 cup chopped nuts (optional – almonds or walnuts)
- 1 tablespoon chia seeds (optional)
- Cooking spray or butter for greasing
Instructions
- Preheat the oven to 350°F (175°C) and spray a 9×9-inch baking dish.
- Whisk together cottage cheese, eggs, sugar-free sweetener or honey, vanilla extract, cinnamon, and salt until smooth and creamy.
- Stir in rolled oats and almond milk; let mixture sit for about 5 minutes.
- Fold in blueberries and nuts, if using, without crushing the berries.
- Pour the batter into the prepared dish and spread it evenly.
- Bake for 40–45 minutes until golden brown and a toothpick comes out clean.
- Cool for 5–10 minutes before slicing into squares.
- Serve warm, optionally drizzled with sugar-free syrup or honey.
Notes
Can be made a day ahead and stored in the fridge. Adjust baking time if using straight from the fridge.
