Description

A nutritious and satisfying breakfast bake combining blueberries and cottage cheese for a deliciously healthy start to your day.


Ingredients

  • 2 cups low-fat cottage cheese
  • 2 large eggs
  • 1/4 cup sugar-free sweetener (allulose or monk fruit) or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats
  • 1/2 cup almond milk or milk of choice
  • 1 1/2 cups fresh or frozen blueberries
  • 1/4 cup chopped nuts (optional – almonds or walnuts)
  • 1 tablespoon chia seeds (optional)
  • Cooking spray or butter for greasing

Instructions

  1. Preheat the oven to 350°F (175°C) and spray a 9×9-inch baking dish.
  2. Whisk together cottage cheese, eggs, sugar-free sweetener or honey, vanilla extract, cinnamon, and salt until smooth and creamy.
  3. Stir in rolled oats and almond milk; let mixture sit for about 5 minutes.
  4. Fold in blueberries and nuts, if using, without crushing the berries.
  5. Pour the batter into the prepared dish and spread it evenly.
  6. Bake for 40–45 minutes until golden brown and a toothpick comes out clean.
  7. Cool for 5–10 minutes before slicing into squares.
  8. Serve warm, optionally drizzled with sugar-free syrup or honey.

Notes

Can be made a day ahead and stored in the fridge. Adjust baking time if using straight from the fridge.
