Description

A rich, creamy dessert with a delightful mango layer that perfectly balances the silky panna cotta.


Ingredients

Scale
  • 1 ½ cups whole milk
  • 1 ½ cups whipping cream
  • ½ cup coconut cream/milk
  • ½ cup white granulated sugar
  • 2 vanilla beans
  • 1 tbsp unflavored gelatin powder
  • 2 tbsp water
  • 2 medium mangos (about 2 cups fruit)
  • ¼ cup white granulated sugar
  • 1 tbsp lemon juice
  • ½ to ¾ cup water
  • 1 ½ tsp unflavored gelatin powder
  • 2 tbsp water
  • 5 to 6 passion fruits (for garnish)
  • 1 cup heavy cream
  • ½ cup confectioner’s sugar
  • 1 tsp vanilla

Instructions

  1. Sprinkle 1 tablespoon of unflavored gelatin over 2 tablespoons of water and let it bloom for about five minutes.
  2. Combine the whole milk, whipping cream, coconut cream, and granulated sugar in a medium saucepan.
  3. Split and scrape the two vanilla beans, adding both the seeds and the pods to the mixture.
  4. Place the saucepan over medium heat, whisking gently until the sugar dissolves and the mixture begins steaming.
  5. Remove from heat and stir in the bloomed gelatin until fully dissolved.
  6. Strain the mixture through a fine-mesh sieve into a large bowl to remove the vanilla pods.
  7. Pour the mixture into your prepared serving cups, filling them about halfway.
  8. Cover with plastic wrap and refrigerate for at least 4 hours or overnight until set.
  9. Peel and dice the mangos, and blend until smooth, adding lemon juice and ¼ cup of granulated sugar.
  10. Bloom the remaining 1 ½ teaspoon of gelatin in 2 tablespoons of water.
  11. Dissolve by gently heating it in the microwave if needed.
  12. Combine the mango puree with ½ to ¾ cup of water and stir in the dissolved gelatin until completely incorporated.
  13. Allow the puree to cool slightly before pouring it over the chilled panna cotta.
  14. Return to the refrigerator to set for an additional 2 hours or until firm.
  15. Whip the heavy cream, confectioner’s sugar, and vanilla until soft peaks form.
  16. Spoon this whipped cream over the mango layer, garnishing with fresh passion fruit seeds.
  17. Serve the Mango Vanilla Panna Cotta chilled.

Notes

Make-ahead tips: Can be prepared a day in advance. Ensure gelatin fully dissolves for the best texture.
