- 2 cups heavy cream
- 1 cup coconut milk
- 1/2 cup sugar
- 2 teaspoons vanilla extract
- 2 teaspoons gelatin
- 3 tablespoons water
- 1 cup mango puree
- Fresh mango slices for garnish
Instructions
- Combine the heavy cream, coconut milk, and sugar in a medium saucepan over low heat until the sugar dissolves.
- Sprinkle the gelatin over the water in a small bowl and let it bloom for 5 minutes.
- Add the bloomed gelatin to the warm cream mixture, stirring continuously until dissolved.
- Stir in the vanilla extract.
- Pour the mixture into molds and refrigerate for at least 240 minutes or until set.
- Top with mango puree and garnish with fresh mango slices before serving.

Make-ahead: Can be prepared a day in advance. Store covered in the refrigerator.
