- 4 boneless chicken breasts
- 2 cups cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp Italian seasoning
- 1 tsp paprika
- Salt + pepper to taste
- 2 tbsp fresh basil, chopped
- Juice of 1/2 lemon
Instructions
- Preheat your oven to 400°F (200°C).
- Place the chicken breasts in a large baking dish.
- Combine cherry tomatoes, black olives, minced garlic, olive oil, Italian seasoning, paprika, salt, pepper, and lemon juice in a mixing bowl.
- Pour the mixture over the chicken breasts.
- Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
- Garnish with fresh basil before serving.
Notes
Make-ahead the chicken and vegetable mixture a day in advance. For a quicker version, try using an air fryer.
