- 2 lbs Chicken breast or boneless thighs
- 1/4 cup Extra virgin olive oil
- 3 tbsp Plain Greek yogurt
- 4 cloves Garlic, minced
- 1 tbsp Dried oregano
- 1 tsp Smoked paprika
- 1 tsp Salt
- 1/2 tsp Black pepper
- 1 Lemon, juiced
- For the sauce:
- 1/2 cup Greek yogurt or Sour cream
- 2 tbsp Fresh parsley, finely chopped
- 1 tbsp Fresh dill, finely chopped
- 1 clove Garlic, grated/mashed
- 1 tsp Lemon zest
- A splash of olive oil
- A pinch of chili flakes
Instructions
- Combine the Marinade: In a medium bowl, whisk together the olive oil, Greek yogurt, minced garlic, dried oregano, smoked paprika, salt, black pepper, and lemon juice until well combined.
- Marinate the Chicken: Add the chicken cubes into the marinade, stirring to coat evenly. Cover and refrigerate for at least 1 hour or overnight.
- Preheat the Grill: Prepare your grill, heating it to medium-high.
- Assemble the Skewers: Thread the marinated chicken onto the skewers, leaving gaps for even cooking.
- Grill the Skewers: Place on the grill and cook for 10-15 minutes, turning occasionally until fully cooked.
- Prepare the Sauce: In a bowl, whisk the Greek yogurt, parsley, dill, grated garlic, lemon zest, olive oil, and chili flakes.
- Serve: Enjoy the skewers hot, drizzled with the garlic-herb sauce.
