- 4 Boneless, Skinless Chicken Breasts
- 8 oz Mushrooms (cremini or button), sliced
- 2 cups Fresh Spinach
- 3 cloves Garlic, minced
- 1 cup Heavy Cream
- 1/2 cup Chicken Broth
- 1/2 cup Grated Parmesan Cheese
- 2 tbsp Butter
- 2 tbsp Olive Oil
- 1 tsp Italian Seasoning
- Salt & Black Pepper, to taste
- Fresh Parsley for garnish
Instructions
- Season the chicken by generously seasoning both sides with salt, pepper, and Italian seasoning.
- Sear the chicken in a large skillet with olive oil over medium-high heat for 5-6 minutes on each side until golden brown. Remove and set aside.
- Sauté the sliced mushrooms in the same skillet after adding butter, for about 5-6 minutes until tender.
- Add the minced garlic and cook for about 30 seconds until fragrant.
- Create the sauce by pouring in heavy cream and chicken broth, stirring to combine, and bringing to a gentle simmer.
- Incorporate the grated Parmesan cheese into the sauce and stir until smooth and creamy.
- Add the fresh spinach and stir until wilted, about 2 minutes.
- Return the seared chicken to the skillet and spoon the creamy sauce over each piece.
- Serve hot and garnish with freshly chopped parsley.
Notes
For a lighter version, substitute half-and-half for heavy cream. Leftovers can be stored in an airtight container for up to three days.
