Description

A comforting chicken dish enveloped in a rich, creamy mushroom sauce, perfect for cozy dinners and special occasions.


Ingredients

  • 4 Boneless, Skinless Chicken Breasts
  • 8 oz Mushrooms (cremini or button), sliced
  • 2 cups Fresh Spinach
  • 3 cloves Garlic, minced
  • 1 cup Heavy Cream
  • 1/2 cup Chicken Broth
  • 1/2 cup Grated Parmesan Cheese
  • 2 tbsp Butter
  • 2 tbsp Olive Oil
  • 1 tsp Italian Seasoning
  • Salt & Black Pepper, to taste
  • Fresh Parsley for garnish

Instructions

  1. Season the chicken by generously seasoning both sides with salt, pepper, and Italian seasoning.
  2. Sear the chicken in a large skillet with olive oil over medium-high heat for 5-6 minutes on each side until golden brown. Remove and set aside.
  3. Sauté the sliced mushrooms in the same skillet after adding butter, for about 5-6 minutes until tender.
  4. Add the minced garlic and cook for about 30 seconds until fragrant.
  5. Create the sauce by pouring in heavy cream and chicken broth, stirring to combine, and bringing to a gentle simmer.
  6. Incorporate the grated Parmesan cheese into the sauce and stir until smooth and creamy.
  7. Add the fresh spinach and stir until wilted, about 2 minutes.
  8. Return the seared chicken to the skillet and spoon the creamy sauce over each piece.
  9. Serve hot and garnish with freshly chopped parsley.

Notes

For a lighter version, substitute half-and-half for heavy cream. Leftovers can be stored in an airtight container for up to three days.
