Description

A hearty and flavorful Mexican Casserole featuring ground beef, zesty tomatoes, and melted cheddar cheese, all layered with crispy tortilla chips.


Ingredients

  • 1 pound lean ground beef
  • 1 can Ranch Style beans
  • 1 10-12 ounce bag tortilla chips, crushed
  • 1 can Ro-tel tomatoes
  • 1 small onion, chopped
  • 2 cups shredded cheddar cheese, divided
  • 1 package taco seasoning
  • 1 can cream of chicken soup
  • 1/2 cup water
  • Sour cream for serving
  • Salsa for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef alongside the chopped onion in a skillet over medium heat until golden.
  3. Drain excess fat from the skillet.
  4. Stir in the taco seasoning, Ranch Style beans, Ro-tel tomatoes, cream of chicken soup, and water.
  5. Combine everything thoroughly.
  6. Create a layer with the crushed tortilla chips in a large baking dish, followed by half of the beef mixture and 1 cup of shredded cheese.
  7. Repeat layers until all ingredients are used, finishing with cheese on top.
  8. Bake for 20-25 minutes or until cheese bubbles and is golden.
  9. Serve hot with sour cream and salsa.

Notes

For a make-ahead option, prepare the casserole the night before and refrigerate before baking. This dish is also adaptable to various ingredients and dietary preferences.
