Ingredients
Here’s everything you need to make this delicious homemade carrot walnut bread.
- 2 cups all-purpose flour: Creates the structure and soft crumb of the bread.
- 1 ½ cups freshly grated carrots: Add natural sweetness, moisture, and beautiful color.
- ¾ cup granulated sugar: Provides sweetness and helps create a tender texture.
- ½ cup vegetable oil: Keeps the bread soft and moist.
- 2 large eggs: Bind the ingredients together and provide structure.
- ½ cup chopped walnuts: Add nutty flavor and a delicious crunchy texture.
- ½ cup milk: Helps create a smooth, moist batter.
- 1 teaspoon baking powder: Helps the bread rise.
- ½ teaspoon baking soda: Works with the other ingredients to support a light texture.
- 1 teaspoon ground cinnamon: Adds warm, aromatic flavor.
- 1 teaspoon vanilla extract: Enhances the sweetness and overall flavor.
- ¼ teaspoon salt: Balances the sweetness and brings out the other ingredients.
Instructions
Step 1: Prepare the Oven and Loaf Pan
Preheat your oven to 350°F (175°C).
Grease a standard loaf pan and line it with parchment paper, leaving a little overhang on the sides. This makes removing the finished bread much easier.
Set the prepared pan aside while you make the batter.
Step 2: Combine the Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, and salt.
Mix until the ingredients are evenly distributed. This helps prevent pockets of baking powder, baking soda, or cinnamon from forming in the finished bread.
Step 3: Mix the Wet Ingredients
In a separate bowl, add the eggs, granulated sugar, vegetable oil, milk, and vanilla extract.
Whisk until everything is smooth and well combined.
The mixture should look creamy and slightly thick, with the sugar evenly incorporated.
Step 4: Combine the Wet and Dry Mixtures
Pour the wet ingredients into the bowl containing the dry ingredients.
Gently mix using a spatula or wooden spoon until the flour is just incorporated.
Avoid overmixing the batter. Mixing too much can develop the gluten in the flour and make the finished bread dense or tough.
A few small lumps in the batter are perfectly fine.
Step 5: Add the Carrots and Walnuts
Fold in the freshly grated carrots and chopped walnuts.
Use a spatula to gently distribute them throughout the batter.
Make sure the carrots and walnuts are evenly incorporated so every slice contains delicious little pieces of carrot and crunchy nuts.
Step 6: Fill the Loaf Pan
Pour the batter into your prepared loaf pan.
Use a spatula to spread it evenly and gently smooth the top.
Tap the pan lightly on the counter to release any large air pockets.
Step 7: Bake Until Golden
Place the loaf pan in the preheated oven and bake for 50–60 minutes.
The bread should develop a beautiful golden-brown top and a soft, fully baked center.
To check for doneness, insert a toothpick into the center. It should come out clean or with a few moist crumbs attached, but no wet batter.
If the top begins browning too quickly before the center is finished, loosely cover it with aluminum foil for the remaining baking time.
Step 8: Cool the Bread
Remove the bread from the oven and let it cool in the pan for 10–15 minutes.
Carefully lift it out using the parchment paper and transfer it to a wire rack.
Allow the loaf to cool completely before slicing. This helps the crumb set and makes it easier to cut neat slices.
Step 9: Slice and Enjoy!
Cut the cooled bread into thick or thin slices, depending on your preference.
Serve plain or with butter, cream cheese, or your favorite spread.
Enjoy the soft texture, sweet carrots, crunchy walnuts, and warm cinnamon flavor in every bite!
