Ingredients

  • 6 small crisp ripe peaches, pitted and quartered
  • 1 sprig rosemary
  • 3 sprigs thyme
  • 1 cup white balsamic vinegar
  • 1/2 cup white vinegar
  • 1 cup water
  • 2 teaspoons kosher salt
  • 2 tablespoons honey
  • 8 oz mozzarella pearls
  • 4 oz prosciutto
  • 12 basil leaves
  • 12 cocktail skewers
  • 3 tablespoons pickling liquid
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • Herbs from pickling liquid, minced
  • Salt and pepper to taste

Instructions

  1. Begin with the Pickling Liquid: In a medium saucepan, combine white balsamic vinegar, white vinegar, kosher salt, and honey. Heat it over medium heat. Stir gently until the salt and honey dissolve completely.
  2. Introduce the Peaches: In a large jar or container, place the quartered peaches and add the sprig of rosemary and thyme. Pour the pickling liquid over the peaches and let them sit for at least 30 minutes.
  3. Prepare the Skewers: Remove peach slices from the pickling liquid, reserving the liquid. Wrap each peach quarter with prosciutto, thread onto a skewer with a basil leaf and mozzarella pearl.
  4. Craft the Dressing: In a small bowl, combine the reserved pickling liquid, minced garlic, and herbs. Whisk until emulsified; add salt and pepper to taste.
  5. Serve with Love: Place the skewers on a platter, drizzle with dressing, and enjoy!

Notes

For best flavor, prepare pickled peaches a day in advance. Can be served with Prosecco, cheese platter, or summer salads.
