Description

A traditional Greek offal roll combining rich flavors of lamb offal, herbs, and spices, perfect for festive gatherings.


Ingredients

Scale
  • 1 kg lamb offal (liver, heart, sweetbreads), cut into bite-sized pieces
  • 1 large set lamb intestines, thoroughly cleaned and rinsed
  • 80 ml olive oil

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Mix the lamb offal pieces with olive oil and season with salt and pepper to taste.
  3. Stuff the cleaned lamb intestines with the offal mixture, tying the ends securely with butcher’s twine.
  4. Place the stuffed intestines in a roasting pan and roast for approximately 60 to 90 minutes, turning occasionally.
  5. Remove from the oven and let cool slightly before slicing.

Notes

Make-Ahead: Prepare the offal mixture a day in advance for deeper flavors. Avoid overstuffing the intestines to prevent bursting.
