Description
A traditional Greek offal roll combining rich flavors of lamb offal, herbs, and spices, perfect for festive gatherings.

- 1 kg lamb offal (liver, heart, sweetbreads), cut into bite-sized pieces
- 1 large set lamb intestines, thoroughly cleaned and rinsed
- 80 ml olive oil
Instructions
- Preheat the oven to 180°C (350°F).
- Mix the lamb offal pieces with olive oil and season with salt and pepper to taste.
- Stuff the cleaned lamb intestines with the offal mixture, tying the ends securely with butcher’s twine.
- Place the stuffed intestines in a roasting pan and roast for approximately 60 to 90 minutes, turning occasionally.
- Remove from the oven and let cool slightly before slicing.
Notes
Make-Ahead: Prepare the offal mixture a day in advance for deeper flavors. Avoid overstuffing the intestines to prevent bursting.
