Ingredients

  • 1 beef chuck roast (34 lbs)
  • 2 lbs baby potatoes
  • 4 carrots, cut into chunks
  • 1 cup beef broth
  • 3 cloves garlic, minced
  • Fresh rosemary and thyme
  • Salt and black pepper

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Prepare the beef chuck roast by seasoning it with salt and black pepper.
  3. Sear the beef in a hot skillet with oil until browned on all sides, about 3-4 minutes per side.
  4. Arrange the baby potatoes and carrot chunks in a baking dish, nestling the seared roast among them.
  5. Add the beef broth and minced garlic over the roast and vegetables.
  6. Roast covered for about 1.5 hours, until the beef is fork-tender.
  7. Serve after resting for 10 minutes, enjoying the tender roast with the caramelized vegetables.
