Instructions
- Preheat your oven to 325°F (165°C).
- Prepare the beef chuck roast by seasoning it with salt and black pepper.

- Arrange the baby potatoes and carrot chunks in a baking dish, nestling the seared roast among them.
- Add the beef broth and minced garlic over the roast and vegetables.
- Roast covered for about 1.5 hours, until the beef is fork-tender.
