A decadent cheesecake featuring a buttery Oreo crust, creamy chocolate filling, and rich caramel, topped with chocolate ganache and crunchy pecans.

- 24 Oreo cookies, crushed
- 6 tbsp unsalted butter, melted (85 g)
- 24 oz cream cheese, softened (680 g)
- 1 cup granulated sugar (200 g)
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup sour cream (120 g)
- 1/2 cup caramel sauce (120 ml)
- 1 cup semi-sweet chocolate chunks (170 g)
- 1 cup chopped pecans (120 g)
- 1 cup semi-sweet chocolate chips (170 g)
- 1/2 cup heavy cream (120 ml)
- Toppings: Whipped cream, mini Oreo cookies, chopped pecans, caramel sauce for drizzling, and optional chocolate buttercream swirls
Instructions
- Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
- Mix the crushed Oreo cookies with melted butter until fully combined. Press this mixture into the bottom of the prepared pan. Bake for 8 minutes and allow to cool completely.
- Beat the softened cream cheese until smooth and fluffy for about 2 minutes. Gradually add in granulated sugar and vanilla, mixing until well combined.
- Incorporate the eggs one at a time, mixing until each is fully integrated.
- Fold in the sour cream, caramel sauce, chocolate chunks, and chopped pecans until just combined.
- Pour the cheesecake filling over the cooled Oreo crust and smooth the top. Bake for 55–65 minutes, or until the edges are set with a slightly jiggly center.
- Turn off the oven and crack the door open. Allow cheesecake to cool inside for about an hour.
- Refrigerate the cheesecake for at least 6 hours or overnight.
- Heat the heavy cream until steaming, then pour over chocolate chips. Let sit for 2 minutes and stir until smooth for the ganache.
- Pour the ganache over the chilled cheesecake and decorate with toppings. Chill for an additional 15 minutes before serving.
