Description

A decadent cheesecake featuring a buttery Oreo crust, creamy chocolate filling, and rich caramel, topped with chocolate ganache and crunchy pecans.


Ingredients

  • 24 Oreo cookies, crushed
  • 6 tbsp unsalted butter, melted (85 g)
  • 24 oz cream cheese, softened (680 g)
  • 1 cup granulated sugar (200 g)
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream (120 g)
  • 1/2 cup caramel sauce (120 ml)
  • 1 cup semi-sweet chocolate chunks (170 g)
  • 1 cup chopped pecans (120 g)
  • 1 cup semi-sweet chocolate chips (170 g)
  • 1/2 cup heavy cream (120 ml)
  • Toppings: Whipped cream, mini Oreo cookies, chopped pecans, caramel sauce for drizzling, and optional chocolate buttercream swirls

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. Mix the crushed Oreo cookies with melted butter until fully combined. Press this mixture into the bottom of the prepared pan. Bake for 8 minutes and allow to cool completely.
  3. Beat the softened cream cheese until smooth and fluffy for about 2 minutes. Gradually add in granulated sugar and vanilla, mixing until well combined.
  4. Incorporate the eggs one at a time, mixing until each is fully integrated.
  5. Fold in the sour cream, caramel sauce, chocolate chunks, and chopped pecans until just combined.
  6. Pour the cheesecake filling over the cooled Oreo crust and smooth the top. Bake for 55–65 minutes, or until the edges are set with a slightly jiggly center.
  7. Turn off the oven and crack the door open. Allow cheesecake to cool inside for about an hour.
  8. Refrigerate the cheesecake for at least 6 hours or overnight.
  9. Heat the heavy cream until steaming, then pour over chocolate chips. Let sit for 2 minutes and stir until smooth for the ganache.
  10. Pour the ganache over the chilled cheesecake and decorate with toppings. Chill for an additional 15 minutes before serving.
