Description

A vibrant and delightful cake featuring light vanilla sponge, whipped cream, and fresh berries, perfect for celebrations.


Ingredients

Scale
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • Red and blue food coloring
  • 1 cup whipped cream
  • Fresh berries (like strawberries and blueberries)

Instructions

  1. Preheat your oven to 375°F (190°C). Line your jelly roll pan with parchment paper and set it aside.
  2. In a large bowl, beat the eggs, sugar, and vanilla extract together until fluffy and pale.
  3. Sift together the flour, baking powder, and salt in another bowl, and gradually add to the egg mixture.
  4. Blend in the milk until the batter is smooth and thick.
  5. Divide the batter into two bowls and tint one with red and the other with blue food coloring.
  6. Pour the blue batter into the prepared pan and spread evenly.
  7. Bake for 10-12 minutes or until the cake springs back when pressed.
  8. Remove the cake from the oven and let it cool briefly, then flip it onto a clean towel.
  9. Roll the cake up with the towel starting from the short end and allow it to cool completely.
  10. Unroll the cooled cake, spread whipped cream and berries on top, then roll back up without the towel.
  11. Chill in the fridge for at least 30 minutes before serving.
  12. Slice and enjoy your cake!

Notes

Make-ahead tips: Bake the sponge cake a day in advance and store it rolled up. Consider using an air fryer for smaller batches.
