- 4 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup milk
- Red and blue food coloring
- 1 cup whipped cream
- Fresh berries (like strawberries and blueberries)
Instructions
- Preheat your oven to 375°F (190°C). Line your jelly roll pan with parchment paper and set it aside.
- In a large bowl, beat the eggs, sugar, and vanilla extract together until fluffy and pale.
- Sift together the flour, baking powder, and salt in another bowl, and gradually add to the egg mixture.
- Blend in the milk until the batter is smooth and thick.
- Divide the batter into two bowls and tint one with red and the other with blue food coloring.
- Pour the blue batter into the prepared pan and spread evenly.
- Bake for 10-12 minutes or until the cake springs back when pressed.
- Remove the cake from the oven and let it cool briefly, then flip it onto a clean towel.
- Roll the cake up with the towel starting from the short end and allow it to cool completely.
- Unroll the cooled cake, spread whipped cream and berries on top, then roll back up without the towel.
- Chill in the fridge for at least 30 minutes before serving.
- Slice and enjoy your cake!

Make-ahead tips: Bake the sponge cake a day in advance and store it rolled up. Consider using an air fryer for smaller batches.
