- 2 New York Strip or Sirloin Steaks (1-inch thick)
- 2 tbsp Olive Oil
- Coarse Salt & Black Pepper
- 4 tbsp Butter (softened)
- 3 cloves Garlic, minced
- 2 tbsp Fresh Parsley, finely chopped
- 1 tsp Fresh Thyme
- 1 tsp Lemon Juice
Instructions
- Prepare the Steaks: First, take the steaks out of the fridge 30 minutes before cooking to let them reach room temperature. Pat them dry with paper towels and season generously with coarse salt and black pepper on both sides.
- Make the Garlic Herb Butter: In a small bowl, mix the softened butter with minced garlic, chopped parsley, thyme, and lemon juice until well combined. Set this aromatic mixture aside.
- Heat the Skillet: Preheat your cast-iron skillet over high heat until it begins to smoke.
- Sear the Steaks: Drizzle olive oil into the hot skillet, and carefully add the steaks. Sear them for 3-4 minutes on one side without moving them. Flip the steaks using tongs and sear the other side for another 3-4 minutes.
- Let Rest and Top with Butter: Transfer your steaks to a cutting board and allow them to rest for about 5 minutes. Top each steak with garlic herb butter.
- Serve and Enjoy: Slice your steaks against the grain and serve immediately.
Notes
Allow your steaks to come to room temperature before cooking for even cooking. You can prepare the garlic herb butter a day in advance for more flavor.
