Ingredients
Let’s take a closer look at what goes into this recipe and why each ingredient matters.
The Mushrooms and Aromatics
- 2 lbs whole button or cremini mushrooms – The foundation of the recipe. Cremini mushrooms offer a slightly deeper, earthier flavor than button mushrooms, though either works beautifully here.
- 4 cloves garlic, thinly sliced – Infuse the mushrooms with bold, aromatic flavor that becomes more pronounced the longer they sit in the brine.
- ¼ cup fresh parsley, chopped and 2 tbsp fresh basil, chopped – These fresh herbs bring bright, vibrant flavor directly into the jar, layering aromatic complexity throughout the pickled mushrooms.
The Brine
- 1½ cups white vinegar – Forms the tangy, acidic base of the brine, essential for both flavor and preservation.
- ½ cup water – Balances the acidity of the vinegar, ensuring the brine isn’t overwhelmingly sharp.
- 2 tbsp olive oil – Adds a touch of richness to the brine, helping to round out the sharp acidity of the vinegar.
- 1 tbsp sugar – Adds a touch of sweetness that helps balance the tanginess of the vinegar.
- 1 tsp salt – Essential for seasoning the brine and enhancing all the other flavors.
- ½ tsp black pepper – Adds a mild, peppery bite to the overall flavor profile.
- ½ tsp red pepper flakes – Adds a gentle, background heat that complements the garlic and herbs.
Instructions
Clean the mushrooms and trim the stems. Cut larger mushrooms in half so that everything pickles evenly, leaving smaller mushrooms whole.
Bring a large pot of water to a boil. Add the mushrooms and cook for 5 minutes, just until they begin to soften. Drain well.
In a saucepan, combine the vinegar, water, olive oil, sugar, salt, black pepper, and red pepper flakes. Bring to a simmer, stirring until the sugar and salt are fully dissolved.
Place the mushrooms, sliced garlic, parsley, and basil into a clean jar, distributing everything evenly.
Pour the warm brine over the mushrooms, making sure they are fully covered.
Let the jar cool to room temperature, then seal it tightly and transfer it to the refrigerator.
Chill for at least 24 hours before serving for the best flavor, allowing the garlic and herbs to fully infuse the mushrooms.
