This recipe uses a flavorful combination of vinegar, herbs, and spices to create a brine that transforms ordinary mushrooms into something extraordinary. Here’s what you’ll need:

  • 2 lbs small button or cremini mushrooms, cleaned and trimmed
  • 2 cups white vinegar
  • 1 cup water
  • 2 tbsp olive oil
  • 2 tbsp granulated sugar
  • 1 tbsp kosher salt
  • 4 garlic cloves, thinly sliced
  • 1 tsp black peppercorns
  • 1 tsp mustard seeds
  • ½ tsp red pepper flakes
  • 2 bay leaves
  • 3 tbsp fresh parsley, chopped
  • 2 tbsp fresh dill, chopped


Instructions

Step 1: Clean and Prep the Mushrooms

Clean the mushrooms thoroughly, using a damp cloth or a quick rinse to remove any dirt, then trim the stems. If you’re working with larger mushrooms, cut them in half so they pickle evenly and are easier to eat.

Step 2: Blanch the Mushrooms

Bring a large pot of water to a boil. Add the mushrooms and blanch for 3 to 4 minutes, just until they turn slightly tender. This step is important — blanching helps the mushrooms absorb the brine more effectively while ensuring they hold their shape and stay pleasantly tender rather than becoming tough or rubbery. Once blanched, drain the mushrooms well to remove excess water.

Step 3: Build the Pickling Brine

In a saucepan, combine the white vinegar, water, olive oil, granulated sugar, kosher salt, black peppercorns, mustard seeds, red pepper flakes, and bay leaves. Bring the mixture to a gentle boil, stirring occasionally until the sugar and salt fully dissolve.

Step 4: Layer the Aromatics

While the brine comes together, place the thinly sliced garlic, chopped parsley, and chopped dill into a clean glass jar. Layering the fresh herbs and garlic at the bottom of the jar ensures their flavor infuses evenly throughout the mushrooms as the brine is poured in.

Step 5: Pack the Mushrooms

Pack the warm, drained mushrooms into the jar on top of the garlic and herbs. Packing them while still warm helps them absorb the hot brine more readily once it’s poured in.

Step 6: Pour the Brine

Pour the hot pickling brine over the mushrooms until they are completely submerged. Full submersion is essential for even pickling and helps prevent spoilage.

Step 7: Cool

Let the jar cool to room temperature on the counter before sealing and refrigerating. This helps prevent thermal shock and ensures safe, gradual cooling.

Step 8: Seal and Refrigerate

Seal the jar tightly with a lid and transfer it to the refrigerator.

Step 9: Let the Flavors Develop

Allow the mushrooms to pickle for at least 24 to 48 hours before serving. This resting period is when the magic happens — the mushrooms absorb the tangy, garlicky, herb-infused brine, resulting in deep, well-rounded flavor throughout.
