- 4 chicken thighs, bone-in, skin-on
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken thighs generously with salt and pepper.
- Place them skin-side down in the hot skillet and sear for about 5 minutes on each side.
- Once browned, remove the chicken from the skillet and set aside.
- Add the chopped onion and minced garlic to the same skillet and sauté until softened, about 3-4 minutes.
- Stir in the diced tomatoes along with dried thyme and oregano.
- Return the chicken to the skillet and cover, letting it simmer for about 30 minutes.
- Serve hot, garnished with fresh basil.
