Description

A comforting dish of tender chicken thighs simmered in a rich tomato sauce with aromatic herbs, perfect for cozy weeknight dinners.


Ingredients

  • 4 chicken thighs, bone-in, skin-on
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken thighs generously with salt and pepper.
  3. Place them skin-side down in the hot skillet and sear for about 5 minutes on each side.
  4. Once browned, remove the chicken from the skillet and set aside.
  5. Add the chopped onion and minced garlic to the same skillet and sauté until softened, about 3-4 minutes.
  6. Stir in the diced tomatoes along with dried thyme and oregano.
  7. Return the chicken to the skillet and cover, letting it simmer for about 30 minutes.
  8. Serve hot, garnished with fresh basil.

Notes

This dish gets better with time; consider making it a day ahead. Perfect when served with crusty bread.
