Instructions
Peel the carrots and cut them into thin, even sticks, about the size of matchsticks or slightly thicker if you prefer more of a crunch. Pack the carrot sticks tightly into a clean glass jar, leaving a small amount of space at the top to allow room for the brine.
Add the sliced garlic, mustard seeds, red pepper flakes, grated fresh ginger, and chopped dill directly into the jar with the carrots. These aromatics will infuse the brine and continue flavoring the carrots as they chill.
In a small saucepan, combine the white vinegar, water, sugar, salt, and black peppercorns. Bring the mixture to a gentle simmer over medium heat, stirring occasionally until the sugar and salt are fully dissolved.
Carefully pour the hot brine over the packed carrots, making sure they’re completely submerged in the liquid. If needed, press the carrots down gently with a spoon or a small utensil to ensure full coverage.
Allow the jar to cool to room temperature on the counter before sealing it with a tight-fitting lid. Cooling first helps prevent excess condensation from forming inside the jar. Once cooled, transfer the jar to the refrigerator.
Let the carrots pickle for at least 1 hour before serving for a light, quick pickle flavor. For a deeper, more developed tang, refrigerate overnight or even for a full day before enjoying.
