Description

A one-pan meal with tender chicken and colorful vegetables, baked in foil for easy cleanup and maximum flavor.


Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 lb baby potatoes, halved or quartered
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1/2 cup ranch dressing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut four large pieces of aluminum foil, approximately 12×18 inches.
  3. Nestle a chicken breast in the center of each piece of foil.
  4. Evenly distribute the halved baby potatoes, broccoli florets, bell pepper, and zucchini around the chicken.
  5. Drizzle a generous amount of ranch dressing over everything.
  6. Fold the foil over the ingredients to create sealed packets.
  7. Place the packets on a baking sheet and slide them into the preheated oven.
  8. Bake for 25-30 minutes, or until the chicken is thoroughly cooked.
  9. Carefully open the packets and serve immediately.

Notes

Don’t overcrowd the packets and use fresh vegetables for the best texture. Experiment with ingredient substitutions to suit your taste.
