Delicious raspberry cheesecake bars with a crunchy pistachio crust, perfect for summer gatherings and special occasions.

- 1 1/2 cups pistachio graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries or raspberry puree
- 1/2 cup sweetened condensed milk
Instructions
- Preheat the oven to 350°F (175°C).
- Mix the pistachio graham cracker crumbs and melted butter until well combined. Press into the bottom of a prepared baking dish.
- Beat the softened cream cheese and granulated sugar until smooth and creamy. Add the eggs one at a time and mix in the vanilla extract.
- Pour the cheesecake mixture over the crust and swirl in the raspberries or raspberry puree.
- Drizzle the sweetened condensed milk over the top.
- Bake for 30-35 minutes until the center is set but slightly jiggly.
- Cool completely, then refrigerate for at least 3 hours before slicing.
Notes
For the best flavor, prepare these bars a day in advance and allow the flavors to meld overnight in the refrigerator.
