Description

Delicious raspberry cheesecake bars with a crunchy pistachio crust, perfect for summer gatherings and special occasions.


Ingredients

  • 1 1/2 cups pistachio graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries or raspberry puree
  • 1/2 cup sweetened condensed milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the pistachio graham cracker crumbs and melted butter until well combined. Press into the bottom of a prepared baking dish.
  3. Beat the softened cream cheese and granulated sugar until smooth and creamy. Add the eggs one at a time and mix in the vanilla extract.
  4. Pour the cheesecake mixture over the crust and swirl in the raspberries or raspberry puree.
  5. Drizzle the sweetened condensed milk over the top.
  6. Bake for 30-35 minutes until the center is set but slightly jiggly.
  7. Cool completely, then refrigerate for at least 3 hours before slicing.

Notes

For the best flavor, prepare these bars a day in advance and allow the flavors to meld overnight in the refrigerator.
