Ingredients

  • 1/4 cup granulated sugar
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 teaspoon salt
  • 1/2 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 cup fresh raspberries
  • 2 tablespoons sugar (for the raspberry swirl)
  • 1 teaspoon vanilla extract

Instructions

  1. Create the dough: In a large mixing bowl, combine the flour, sugar, yeast, and salt. In a separate bowl, whisk together the warm milk, melted butter, and eggs until smooth. Gradually mix the wet ingredients into the dry until cohesive, resembling a shaggy dough.
  2. Knead the dough: Lightly dust your work surface with flour. Knead the dough by hand for about 10 minutes, or use a stand mixer with a dough hook until the dough becomes smooth and elastic.
  3. First rise: Grease a clean bowl and place the kneaded dough inside, turning it to coat it lightly with oil. Cover with a towel and let it rise in a warm spot for about 60 minutes, or until doubled in size.
  4. Prepare the raspberry swirl: Mash the fresh raspberries with the two tablespoons of sugar and vanilla extract in a medium bowl until chunky.
  5. Shape the loaf: Once the dough has risen, punch it down to release the air. Roll it out on a floured surface into a rectangle. Spread the raspberry mixture evenly over the dough.
  6. Roll up and place in pan: Starting from the long side, roll the dough into a log, pinching seams to seal and placing in a greased loaf pan.
  7. Second rise: Cover the loaf pan with a towel and let it rise again for 30-45 minutes. Preheat your oven to 350°F (175°C).
  8. Bake the brioche: Bake for 30-35 minutes, until golden brown and sounds hollow when tapped on the bottom.
  9. Cool and enjoy: Allow the loaf to cool in the pan for about 10 minutes before transferring to a wire rack. Let it cool completely before slicing.

Notes

Allowing the dough to rise properly is key to achieving the fluffy texture. You can prepare the dough the night before and refrigerate it for enhanced flavor.
