Description

A delightful twist on the classic tiramisu, this Raspberry Tiramisu layers creamy mascarpone and fresh raspberries with airy ladyfingers, creating a refreshing and indulgent dessert.


Ingredients

  • 24 Ladyfinger Biscuits (Savoiardi)
  • 16 oz Mascarpone Cheese
  • 1 cup Heavy Cream
  • 1/2 cup Fresh Raspberries
  • 1/2 cup Sugar
  • 1/2 cup Raspberry Puree or Sauce
  • 1 tsp Vanilla Extract
  • 1/2 cup Coffee or Espresso (optional)

Instructions

  1. Mix the mascarpone cheese, heavy cream, sugar, and vanilla extract in a large mixing bowl. Whip until soft peaks form.
  2. Combine the raspberry puree with coffee in a shallow dish if using.
  3. Soak each ladyfinger briefly in the raspberry sauce, then lay in a single layer in your dish.
  4. Spread a layer of the whipped mascarpone mixture over the ladyfingers.
  5. Add fresh raspberries over the cream layer.
  6. Repeat layering with remaining ingredients, finishing with mascarpone on top.
  7. Chill in the refrigerator for at least 4 hours.
  8. Garnish with fresh raspberries and raspberry sauce before serving.

Notes

This dessert tastes even better the next day. Be careful not to over-soak the ladyfingers and chill properly for best results.
