Description

A vibrant appetizer featuring sweet potato rounds topped with roasted beets, creamy burrata, and fresh pesto.


Ingredients

Scale
  • 2 medium Sweet Potatoes
  • 4 medium Beets
  • 8 oz Burrata
  • 1/2 cup Pesto
  • 2 tbsp Olive Oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Prep the oven by preheating to 400°F (200°C).
  2. Wrap the beets in aluminum foil and place them on a baking sheet, roasting for 45-60 minutes.
  3. Slice sweet potatoes into ½-inch rounds and toss in olive oil, salt, and pepper.
  4. Arrange sweet potato rounds on the baking sheet and roast for 25-30 minutes, flipping halfway through.
  5. Prepare the burrata by tearing it into pieces and set aside.
  6. Assemble the dish by layering roasted beets and a dollop of burrata on each sweet potato round, then drizzling with pesto.

Notes

You can prepare sweet potatoes and beets a day in advance. Store in airtight containers in the fridge and reassemble just before serving.
