- 2 medium Sweet Potatoes
- 4 medium Beets
- 8 oz Burrata
- 1/2 cup Pesto
- 2 tbsp Olive Oil
- Salt to taste
- Pepper to taste
Instructions
- Prep the oven by preheating to 400°F (200°C).
- Wrap the beets in aluminum foil and place them on a baking sheet, roasting for 45-60 minutes.
- Slice sweet potatoes into ½-inch rounds and toss in olive oil, salt, and pepper.
- Arrange sweet potato rounds on the baking sheet and roast for 25-30 minutes, flipping halfway through.
- Prepare the burrata by tearing it into pieces and set aside.
- Assemble the dish by layering roasted beets and a dollop of burrata on each sweet potato round, then drizzling with pesto.
Notes
You can prepare sweet potatoes and beets a day in advance. Store in airtight containers in the fridge and reassemble just before serving.
