Description

A stunning appetizer that combines roasted beets and creamy goat cheese, creating a colorful and flavorful dish perfect for any gathering.


Ingredients

  • 2 medium-sized Roasted Beets
  • 8 ounces Goat Cheese, softened
  • ½ cup Walnuts, chopped
  • Crackers, for serving
  • Toasted baguette slices, for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap each beet in aluminum foil, placing them on a baking sheet. Roast for about 45-60 minutes until tender. Let them cool before peeling off the skins.
  2. Combine in a mixing bowl the softened goat cheese, finely chopped roasted beets, and chopped walnuts. Stir gently until the ingredients meld into a colorful and creamy mixture.
  3. Transfer the beet and goat cheese mixture onto a sheet of parchment paper, shaping it into a log.
  4. Wrap the log tightly in the parchment and refrigerate for at least an hour to firm up.
  5. Unwrap the log and serve it with a selection of crackers and toasted baguette slices.

Notes
