- 8 ounces Goat Cheese, softened
- ½ cup Walnuts, chopped
- Crackers, for serving
- Toasted baguette slices, for serving
Instructions
- Preheat your oven to 400°F (200°C). Wrap each beet in aluminum foil, placing them on a baking sheet. Roast for about 45-60 minutes until tender. Let them cool before peeling off the skins.
- Combine in a mixing bowl the softened goat cheese, finely chopped roasted beets, and chopped walnuts. Stir gently until the ingredients meld into a colorful and creamy mixture.
- Transfer the beet and goat cheese mixture onto a sheet of parchment paper, shaping it into a log.
- Wrap the log tightly in the parchment and refrigerate for at least an hour to firm up.
- Unwrap the log and serve it with a selection of crackers and toasted baguette slices.
