Description

A vibrant dish featuring earthy roasted beets paired with a creamy dill dressing, perfect for any occasion.


Ingredients

  • 4 medium beets (washed and trimmed)
  • 2 tablespoons olive oil (for roasting)
  • 1 teaspoon salt (to taste)
  • 1 teaspoon black pepper (to taste)
  • 1 cup sour cream
  • 2 tablespoons fresh dill (chopped)
  • 1 tablespoon lemon juice
  • 1 clove garlic (minced)
  • 1 teaspoon salt (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the washed and trimmed beets on a parchment-lined baking sheet.
  3. Drizzle them with olive oil and sprinkle with salt and black pepper.
  4. Roast in the preheated oven for about 45–60 minutes or until tender.
  5. Once roasted, allow the beets to cool slightly and peel off the skins.
  6. In a mixing bowl, combine the sour cream, dill, lemon juice, minced garlic, and salt.
  7. Taste and adjust the seasoning of the dill cream if necessary.
  8. Slice the roasted beets into wedges or cubes.
  9. Arrange the beets on a serving platter and drizzle the dill cream over the top.
  10. Garnish with extra dill sprigs and enjoy!

Notes

Make the beets a day in advance and prepare the dill cream just before serving for optimal freshness.
