- 4 ripe pears (such as Bartlett or Bosc)
- 1 cup creamy goat cheese
- 1/2 cup walnuts
- 1/3 cup pure maple syrup
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the pears in half and remove the cores, keeping the skins on.
- Arrange the pear halves cut side up on a baking sheet. Drizzle with olive oil and season with salt and pepper.
- Roast the pears for about 25 minutes, until tender and slightly caramelized.
- Combine walnuts and maple syrup in a small saucepan and heat gently over low heat.
- Once the pears are roasted, place a dollop of goat cheese on each half.
- Drizzle the warm walnut mixture over the pears and serve warm.
